Kim CoronicaWinner - Electrolux Young Restaurateur 2010Victoria My story...Whilst I am involved in three restaurants, Richmond Hill Café & Larder, Florentine and Sapore, Richmond Hill Café & Larder is where I spend most of my time. Taking over from Stephanie Alexander was incredibly daunting, and whilst it wasn’t easy, we have created our own stamp on the restaurant to create a relaxed and welcoming experience. Using the best seasonal produce, prepared simply, the food is complemented by wines from around the world. Our talented team are people with integrity and we adopt a consultative approach to decision making. Whilst this can be more time consuming, it enables staff to feel an integral part of the business, and the decisions are of a higher quality. |

Thomas MooreWinner - Electrolux Young Restaurateur 2010New South Wales My story...It has always been a dream to open my own restaurant with my wife, Crystal. Grazing bring to life my vision for growing and cooking with beautiful organic heirloom produce straight from my own kitchen gardens. Grazing is not simply a name but a philosophy. My menus focus on seasonality, local produce and what the apprentice chefs harvest from the restaurant garden. Diners are able to stroll around the garden before dinner and see what might end upon their plates. By training young local people, we are able to help provide a place of employment and hopefully the start of a career. Training for both the kitchen and floor is the heart of our philosophy. Our floor staff provide friendly but professional service, with Grazing’s gastronomic credo of not hustling you out the door after the meal ends. |
