We recently caught up with head cheese maker and the crew at Witches Chase Cheese Co. and enjoyed some great insights into the methods behind their award winning cheese. We had a wonderful time on our visit as part of the 2011 Produce Tour, getting the inside information on the formation of different cheeses, how the different cultures are utilised and even got our hands dirty separating the curd and whey.
Here is a little more of their story...............
Witches Chase Cheese Company began in 2004 with Meredith and Andre Morris in Beacon Rd, North Tamborine. They had a deep desire to produce handmade cheeses to go along with their passion for drinking good wines! With a modification to the cheese factory and Andre’s cheese training and certification from Gilbert Chandler University in Melbourne, the little factory started to produce cheese in October 2004. With help from instructor Neil Willman, they opened thier doors in November. The distinct tree logo and swing came from a line of Liquid Amber trees that adorned the driveway of Beacon Rd with a swing they put up for their daughter Sienna. They chose Witches Chase Cheese Company as their name as the Witches Falls National Park was the first National Park in Queensland and the road that leads into it is called Witches Chase, which until December 2008 they were situated near.
In late 2008 the new factory at the southern end of Gallery walk opened (a five minute drive from the old location). The relocation and expansion enabled Andre and Meredith to add a few more of their favourite indulgences under the one roof. Pairing up Cheese Shop and Factory with the brand new MT Brewery and a five star Bistro & Grill called Liquid Amber. With a brand new location and award winning cheese the future looks bright for Witches Chase Cheese Co.
