The highlight of the program for me was...

Meeting other young chefs and waiters from around the country. Having the opportunity to travel and meet some of the premium suppliers and producers from Victoria. The various experiences in Sydney; comp, presentation evenings and meeting people.

I feel that the EAFE program has assisted me in my career because...

t has provided amazing exposure personally and to my employer as well as presented many exciting travel opportunities. I have been fortunate enough to meet chefs and restaurateurs who I admire as well as other likeminded young chefs and waiters, many of whom will be the face of Australian hospitality in the future.

I became a chef because...

I became a chef because i have uncles who are chefs and i was always fascinated watching them in the kitchen. My nanna was also a fantastic cook and some of my earliest memories are of nanna and poppa cooking toast over the open fire early in the morning in port fairy.

My food philosophy is...

I aim to serve modern food, utilising local seasonal produce. I want to continue to learn, and teach those around me. I want my food to be accessible and enjoyable, but display a sound understanding of modern techniques and ingredients. mostly, I want people to feel a sense of excitment when coming to eat and a sense of satisfaction when they leave.

My career dream is...

To be involved in hospitality in some form for the rest of my career. I would love to be able to run a successful restaurant, teach and inspire others and continue my own journey of development. I would also love to travel and write about food and culture all around the world, gaining a greater understanding of the many food related traditions and customs.
