By the time I am 35 …my aim for the future is to create, from the ground up, a truly world class restaurant. To do this I will spend some time working around the world in the restaurants that are setting the standard. I want to work closely with the chefs that are creating the most refined and innovative cuisine. I want to use this experience as the backbone of my own restaurant. And as the chef of such as restaurant it would give me the opportunity to impart the knowledge and experience I have gained on my staff and others in my profession…
