est. Head Chef, Peter Doyle, is widely regarded as a founding father of modern Australian cuisine. With a career spanning 30 years, he has been referred to as a “home-grown legend “and “inspiration to the industry”. He has opened some of the city’s most well regarded restaurants – Turrets in the city, Reflections at Palm Beach, Le Trianon, and Cicada in Potts Point. He won the “Professional Excellence” award in the 2003 and 2011 SMH Good Food Guide Awards, and was “Restaurateur of the year “at the Restaurant & Catering Awards in 2004.

est. is Establishments fine dining restaurant featuring the magnificent heritage aspects of the Establishment building together with equally beautiful interiors. Peter Doyle joined in 2003, when est. was awarded “Best Restaurant in a Hotel” by the Restaurant & Catering Association. He has also helped est. obtain the prestigious three Chefs Hats in the coveted SMH “Good Food Guide” Awards from 2003 to 2013, with est. awarded “Restaurant of the Year” in 2006 and “favourite modern Australian” restaurant, reinforcing its position as one of Sydney’s most memorable dining experiences.
