Australia’s most prestigious award for young chefs

If you are an aspiring young chef who’d like to take your career to the next level, then this is the awards for you! Enter now for the opportunity to meet industry leaders, engage with like-minded peers, challenge yourself to get out of your comfort zone, gain constructive feedback from the judges, visit one of Australia’s leading food-growing regions and learn about agriculture & viticulture, and, if you are the 2019 winner, travel overseas and experience a stagiaire at a world-renowned restaurant.

WHO CAN ENTER?

Chefs who meet the following criteria are eligible to enter:

  • Are over 18 years of age and under 30 years of age on Wednesday 7 August 2019
  • Are currently working professionally within the restaurant or catering industry in Australia on a full time basis or equivalent
  • Are currently working in an establishment that holds a liquor licence
  • Have completed and hold the nationally recognised qualification of Certificate III in Hospitality – Commercial Cookery OR have worked full time as a chef for a minimum of 2 years and can provide a written & signed reference from their current employer stating your position and length of employment
  • Are not the owner, or part owner of a restaurant/hospitality business
  • Are not a hospitality trainer/teacher on a casual, part time or full time basis
  • Are an Australian Citizen or Permanent Resident

Entry is via submission of a completed online application form and payment of the entry fee by the deadline.

As part of the application process you will create a three course Autumn menu reflective of your cooking style and ethos, featuring certain key ingredients; you will also be asked to include a detailed recipe for the main course dish, which must be able to be prepped, cooked and plated within a 90 minute timeframe.

JUDGING PROCESS

The judges will assess all eligible applications based on creativity, presentation, costings, as well as written communication skills. They will select a shortlist of the strongest applications and these chefs will be invited to Sydney for the first round cook-off.

The first round cook-off will consist of a 90 minute cook using EITHER a mystery box of ingredients OR the recipe submitted in the finalists’ application. The judges will watch the cook, taste the dishes and hold one-on-one interviews with each chef. The top performing chefs will be selected and they will return to Sydney at a later date for the second round cook-off.

The second round cook-off will consist of a 90 minute cook using a mystery box of ingredients. The judges will watch the cook, taste the dishes and hold one-on-one interviews with each chef. The top performing chefs will be named the 2019 Young Chef National Finalists and they will proceed to the third and final round cook-off the next day.

The final cook-off will consist of a 3.5 hour cook-off where contestants will produce a 3 course menu, plating 4 portions of each course, using a mystery box of ingredients. The judges will watch the cook, taste the dishes and hold one-on-one interviews with each chef. The top performing chef will be crowned the 2019 Young Chef Winner and the next top performing chef, the 2019 Young Chef Runner-up. The winner and runner-up will be announced in August at the awards event in Sydney.

  • 13-14 May 2019: Round one cook-off (Sydney)
  • 3-5 June 2019: Round two & three cook-offs (Sydney)
  • 4-6 August 2019: Produce Tour (Destination TBC)
  • 7 August 2019: Awards Event (Sydney)

THE 2019 young chef national finalists will win:

The 2019 Young Chef National Finalists will join the 2019 Young Waiter and Restaurateur National Finalists on an all-expenses paid tour of one of Australia’s leading food and wine regions to meet and learn from some of Australia’s world renowned dairy, seafood, meat, horticultural and viticultural producers. This prize is made possible with the support of our valued partners such as Porkstar, Fisheries Research and Development Corporation and Rare Medium; and, Virgin Australia who provide our national finalists with their flights to and from the 2019 produce tour destination.
